Mamposteao Rice Burrito

A perfect fusion of textures: the firmness of long-grain rice, the smokiness of bacon, and the sweetness of ripe plantains, all enhanced by fresh sofrito and creamy avocado.
Ingredients:
1 cup of Rico® Long Grain Rice
2 cups of water
2 tbsp. of salt
1 tbsp. of oil
Chopped vegetables: Bell pepper, onion, and culantro (to taste)
Beans
Bacon, chopped and fried
Sweet plantains, chopped and fried
1/2 cup of water
1 tbsp. of seasoning with color (sazón con color)
1 12” flour tortilla
Fresh avocado chunks
Instructions:
Cooking the rice: In a pot, combine the 2 cups of water, salt, and 1 tablespoon of oil. Once it comes to a boil, add the cup of Rico® Rice. Reduce the heat and let it simmer covered for 15–17 minutes until the grains are tender.
In a large skillet, heat the other tablespoon of oil. Sauté the bell pepper, onion, and culantro until fragrant.
Add the beans, bacon, and sweet plantains. Sauté everything together for 3 minutes so the flavors blend.
Add the 1/2 cup of water and the tablespoon of sazón. Mix well and let the liquid reduce slightly.
Stir the cooked rice into the skillet. Mix thoroughly until the rice is completely coated with the seasoning and vegetables.
Warm the flour tortilla slightly. Place a generous portion of the rice mixture in the center, add the fresh avocado chunks, fold the burrito, and it's ready to enjoy!
